Asafoetida is a spice native to Persia and most commonly used in Indian cuisine. It is the gum from the sap of the roots of Giant Fennel and raw, it has a rather fierce rotten smell. Upon cooking, the flavor changes to that of onions + garlic. Asafoetida is so potent it must be stored in an airtight container, otherwise it will contaminate neighboring spices. Cook something with it!
